Ingredients

  • 4lb Chicken wings separated into drums and flats
  • Half Chicken Man - Hot Honey Rub
  • Duck fat spray or any high-smoke-point, neutral oil spray
  • 1/2 cup Honey
  • 1/2 cup Hot Sauce (We use MFHeat Co)
  • 1/4 cup Butter
  • 2 Tbs Half Chicken Man Hot Honey Rub

Directions

  • Thaw overnight if you're using frozen wings
  • Light your smoker (or oven) and set to 325
  • Pat wings dry and separate drums, flats. Dry wings to start = crispy wing finish.
  • Add medium coverage of seasoning all sides with Hot Honey Rub
  • Lightly grease wire rack and position wings so they're close but not touching
  • Cook for 45 minutes
  • Check the wings and rotate if needed. Spray with duck fat spray and apply a dusting of Hot Honey Rub
  • Cook for another 45 minutes or until the wings reach internal temp of 190-210 depending on your preference. We like them around 200
  • SAUCE: Combine honey, hot sauce, melted butter and Hot Honey Rub
  • Toss finished wings in your hot honey sauce, serve wth blue cheese or ranch and enjoy!

HCM TIPS

Plan ahead! If you have the time, brine these wings overnight in a salt water brine. Use 1/4 cup salt per 4 cups water.
